Cake decorators design and decorate cakes for various celebrations and occasions, including weddings, christenings, anniversaries and birthdays. Many cake decorators start up on a part-time basis, having previously developed their skills as a hobby, and often trade from a home-based kitchen or small catering unit.

Homemade cake and biscuit makers produce, package and supply a range of small sponge cakes and cupcakes, tarts, biscuits, brownies, cookies, tray bakes, loaf cakes, baked wedding favours and sweet pastry products on a small scale, usually operating from a home-based kitchen.

Fast food takeaways are part of the highly competitive ‘food-to-go’ sector, which serve popular menu items and snacks including burgers, kebabs, chips and pizza, as well as a selection of cold drinks for consumption off the premises.

Mobile coffee carts serve fresh filter coffee and a wide range of freshly prepared ‘speciality’ coffees, such as lattes, mochas and cappuccinos, from street trading ‘pitches’ and at regular markets and outdoor events. Anyone operating a mobile coffee cart will require a street trading licence from their local authority. Separate permission may also be required in order to trade from pitches in retailers’ car parks and at visitor attractions.

Food business operators, such as mobile coffee cart owners, are subject to significant amounts of legislation relating to registration of premises, food safety, waste disposal, and health and safety.

A sandwich delivery round supplies freshly made sandwiches, wraps, baguettes and salads, which are either purchased ready-made from local suppliers or made by the owner and staff. All food business operators are subject to significant amounts of legislation relating to registration of premises and delivery vehicles, food safety, food labelling, waste disposal, and workplace health and safety.

Fish and chip shops are specialist takeaways that prepare, cook and serve a range of fried fish, freshly cooked chips, battered sausages, chicken nuggets, burgers, and pies and pasties. Sandwiches are delivered using a vehicle designed or adapted for this purpose. Operating along the same route or ’round’ at regular times each day can help to establish a loyal customer base.

Catering services and their staff are hired to prepare, cook, deliver and serve food and drink both at-table and buffet-style, for one-off client events and for regular contracts. Catering services are highly regulated under legislation governing food safety, the supply of alcohol and health and safety. Catering kitchens, where food is stored, prepared and cooked, and delivery vehicles must be registered with the local authority in the area where the caterer’s main business premises are located.
