A Guide to Food Hygiene Regulations in the UK

Across the UK, food hygiene regulations place requirements on food business operators to ensure that they meet minimum hygiene standards.

Requirements include registering food business premises, implementing a food safety management system, providing adequate staff training, and keeping premises and equipment clean and well maintained.

Food hygiene regulations in the UK consist of four separate sets of national legislation, which provide for the enforcement of European Union (EU) regulations EC 852/2004 and EC 853/2004:

The Food Safety and Hygiene (England) Regulations 2013.

The Food Hygiene (Wales) Regulations 2006.

The Food Hygiene (Scotland) Regulations 2006.

The Food Hygiene Regulations (Northern Ireland) 2006.

These regulations apply to all food business operators, including those that manufacture, prepare, handle, process, package, store, transport, sell, distribute or supply food.
